Exquisite
Pay attention to the hops. Seems like a ''duh'' thing to say for the IPA style, but you would be amazed at how many breweries get that wrong. If any beer style required a keen insight into the hop profile, it's the IPA, even more so with the Imperial IPAs. Dogfish Head is well known for their daring interpretations of quality brews, but I consider their 60/90/120 Minute IPAs as purist examples of the IPA style. They are so true to form that they are widely regarded as some of the best IPAs on the planet.

Today I decided to split the difference and enjoy a 90 Minute IPA. It makes me feel like Goldilocks and the Three Beers. Not too light, not to strong, just right. In the glass, 90 Minute has a crystal clear deep orange coloration. Very straight forward, very enticing. As expected, the aroma is big and bold with a lot of crisp citrus and floral notes. As an introduction to strong IPAs, it doesn't get much better than that. IPAs at their core should be a no frills attack on the senses. Big specific aromas that foreshadow big specific flavors.

That first sip of a 90 Minute IPA is beautiful. This beer is a study in proper IPA flavor trains. The front end is smooth and delicious, highlighting those savory herbal qualities of the hop plant. The middle ground settles into a delightfully clean citrusy bite, allowing your taste buds to acclimate to the aggression. The finish is long and bitter, but not overpowering, allowing the drinker to properly analyze the hop profile.

Overall, Dogfish Head's 90 Minute IPA is a remarkable IPA sitting comfortably in the middle ground between standard and Imperial. Although it is technically regarded as Imperial with a 9% ABV, it's still smooth and savory enough to be regarded as a bridge between the two. I regard the 60/90/120 Minute ladder as a brilliant insight into the IPA spectrum. Novices can start at the 60 minute and incrementally hone their palate. I can happily recommend 90 Minute IPA to any mid-to-high level brew fan. It's a stellar example of a strong, yet appropriately balanced IPA. So once again, hats off to Dogfish Head Brewery. My refrigerator overfloweth with your mainstays.
