Wow, the Dernière Volonté is a very, very interesting brew. I'm really having a hard time putting it into words. Truth be told, I know very little about Belgian Blond Ales at this point. I've only sampled a handful in my life and they've all been spread out over time. So I know I'm at a disadvantage going into this review, but hey, that's the fun of new experiences. So here we go...

When I first opened the bottle, my first impression was that of a really strong hefeweizen. It had all that citrus and spice, but on a really harsh level. I poured it into the glass and boy was it thick. Again, it resembled a hefe, but was really cloudy and completely opaque. There's a lot of sediment in this beer. Not exactly shocking for a Belgian, but this is supposed to be a lighter version, so it was a bit off-putting. The mouthfeel actually reminds me more of an IPA than a Belgian. The front end is loaded with hops and it slowly dissipates. The taste definitely stays with you. The flavor is actually pretty nice, almost like a Belgian IPA. But be warned, this beer tastes nothing like it looks. It's a very complex beverage and I'm getting new spice notes with every sip.

Overall, I certainly recommend the Dernière Volonté, but like I said before, I currently have little experience with Belgian Blond Ales. I'm about 2/3 the way through the beer now and it's actually losing a lot of its bite and turning into a sweeter wheat. I'll definitely have to explore this style more in the future, but at least now I'll have this review to reference next time. :)

Overall, this beer has impressed me enough to try other selections from the Dieu Du Ciel brewery. Those crazy French Canadians can certainly make an interesting brew. J'adore la bière!
